Biryani Masala


Biryani Masala powder is a blend of some flavourful spices, light roasted and ground. They add a special aroma to Biryanis and enhance their taste manifold. Instead of going for the store bought readymade powder, I always prefer to make my own Biryani Masala powder and also like adding some whole spices while cooking the biryani rice.

The recipe of Biryani Masala is quite simple and can be easily made at home. The spices should be roasted individually because each spice has its own heating point. They can alternatively be sun dried. Once all the spices are well roasted, grind them into a fine powder and store in an air-tight container. If planning to make the powder in a large quantity, then make sure that it is stored in separate air-tight containers and keep them in the refrigerator. They stay fresh and flavourful if kept in a proper manner.


Biryani Masala Recipe


  • Cinnamon: 4, I” sticks
  • Bay Leaf: 2
  • Green Cardamom; 8-10
  • Coriander: 1 teaspoon
  • Cloves: 8-10
  • Cumin: 1 teaspoon
  • Black Cardamom: 2
  • Star Anise: 2-3
  • Nutmeg: 1 small
  • Mace: 4-5 small barks
  • Fennel: 1 teaspoon


  1. Dry roast individual ingredients on a skillet or heavy bottomed pan till fragrant. Do not over heat the spices, which will spoil the flavour.
  2. Grind into a smooth powder and store in an air tight container.
