Eggless Banana Walnut Bread

Banana and walnut makes for an amazing combination both from health as well as taste perspective. I have always been very fond of banana-walnut cakes and have tried many versions of the same from various recipe books and blogs. The recipe of the banana-walnut cake that I am sharing with you today uses very simple ingredients. Use of cooking oil instead of butter makes it even softer (I had considerable doubts initially). The flavour of banana and crunch of walnuts makes this an awesome soft and fluffy delight. A dash of cinnamon gives it an even greater dimension and makes it more flavorful. My kids loved this cake and this happens to be one of their favorite anytime snack option. Serve this with a glass of milk or a cup of tea, it’s a great healthy breakfast or snack choice.

 

- SOME HELPFUL TIPS -

  1. Baking time might vary from oven to oven.
  2. All purpose flour can be replaced with whole wheat flour. The cake will be slightly dense but delicious never the less.
  3. Both milk and curd should be at room temperature.
 

Eggless Banana Walnut Bread Recipe

Preparation time: 15 minutes
Cook time: 40 - 45 minutes (Baking Time)
Yield: 500 gms loaf

Ingredients

  • Refined Flour/ All Purpose Flour: 2 cups.
  • Demerrara Sugar/ Brown Sugar/ Regular Sugar: 1 cup or as per taste.
  • Ripe Bananas: 4 medium sized
  • Baking Powder: 2 teaspoon
  • Baking Soda: 1 teaspoon
  • Yogurt: ½ cup
  • Cooking Oil: ½ cup
  • Cinnamon Powder: ½ teaspoon
  • Chopped Walnuts: ¾ cup
  • Vanilla Essence: 1 teaspoon
  • Salt: A pinch
  • Milk: ½ cup or as per requirement
  • Long Loaf Tin: For baking

Method

  1. Preheat the oven at 180C for 10 minutes. Sieve the flour, baking powder, baking soda, cinnamon powder and salt. Keep aside.
  2. Chop the walnuts into small pieces and dust with ½ teaspoon flour. Mash the bananas into a smooth pulp with a fork. Keep aside.
     
  3. In a bowl, beat sugar and oil for 3-4 minutes.
  4. Add yogurt and vanilla essence and beat further till well incorporated.
  5. Now add flour and milk alternatively. Fold in well.
  6. Add chopped walnuts (leave handful for sprinkling on top) and mashed bananas and mix with a spatula.
     
  7. Pour the batter in a greased baking tin/pan. Sprinkle the rest of the chopped walnuts. Tap the tin on the work counter to release any air bubble. 
  8. Bake in the preheated oven at 180C for 40-45 minutes or till the knife/skewer inserted comes out clean.
  9. Let the cake cool down for10-15 minutes. Then take it out on wired rack or plate to let it cool down to room temperature.
  10. Serve delicious and flavorful banana walnut bread with a glass of milk or a cup of tea/coffee.
